Aragonese traditional cuisine offers a series of tasty dishes that constitute a rather homogeneous whole, though there are variations in their presentation and seasoning.

The traveller visiting the places related to Goya or his work must make the most of the trip and taste the local specialities, choosing those prepared with the best products of the land he is travelling through.

The best-known Aragonese dishes are migas (dish based on fried breadcrumbs) and ternasco asado (roast lamb), but we cannot miss other delicious dishes suchas the trout of the Piedra Monastery, the borraja of Calatayud (a vegetable that is little known in the rest of Spain) or the tasty vegetables from the high riverside of the river Ebro. We should not forget either such dishes as jarretes (hocks), perdiz escabechada (pickled partridge), ham or rabbit, either it is roasted or grilled.

As for the desserts, the choice is even more varied, if that is possible. Aragonese tradition in confectionery, emerging from the ancient mixing of cultures, is rich in quantity and diversity.

Fuendetodos’ bollas, made in a firewood oven, are a good example, as well as Muelas tortas (cakes). In Calatayud you must taste the chocolate-covered candied fruits (frutas de Aragon) and the bizcochos (sponge cakes). And you cannot leave Huesca without having tasted, at least, its famous Russian cake.

The fame of Aragonese wines dates back to a period much older than Goya. Usually, if you phone beforehand, it is possible to visit the wine cellars of the different denominaciones de origen (officially certified typical local products). You can know, next to the barrel itself, the ample range of wines coming from the vines of Goya's land.

Passing by Muel and Fuendetodos we can appreciate the well-known wines of Campo de Cariñena, younger and more elaborated than ever. In Calatayud or its surroundings we can accept a glass of rosé, of a high quality and bouquet. The wine offer of the Somontano in Huesca is equally vast and attractive, including an excellent white wine. In Remolinos or Pedrola we can order wines from the nearby Campo de Borja, whose young wines cheer up the palate of the connoisseur.
